Brownies for a Crowd (Kimberly Stocking)
2 ½ cups butter/margarine
1 1/2 cups cocoa
4 cups sugar
8 eggs
4 tsp vanilla
3 ½ cups flour
2 containers of ready-made chocolate frosting (or make your own!)

Melt butter in a large saucepan.  Add cocoa and then take off the heat.  Stir in sugar, eggs and vanilla.  Add flour, and stir in just until mixed.  Pour into a greased jelly roll pan (10" x 15" x 1").  Bake at 425° for 25 minutes.  Let cool and then frost.  It will take 1 1/2 containers of ready-made frosting.

Salsa (Julie Ashcroft)
1/2 yellow onion
1 red pepper
1 green pepper
1/2 bunch cilantro
5 green onions
3 jalepeno peppers
48 oz. diced tomatoes
2 tsp garlic salt
1 tsp onion salt
1/2 tsp black pepper
1 tsp crushed red pepper
2 tsp red wine vinegar
2 tsp lemon juice
Cut your vegetables in a food processor and the mix all ingredients together.  I taste it to see how it tastes, if it is too hot, I usually add another can of tomatoes.  If it needs a little more salt, add some more garlic salt.  This salsa turns out a little different each time depending on how hot the peppers are.  Enjoy!



Un-Fried Ice Cream (Kristi Shakespeare)
1/2 c. butter or margarine
1 c. brown sugar
2 c. Rice Crispy cereal
1 c. coconut
1/2 c. chopped nuts
1/2 gal. vanilla ice cream
Remove ice cream from freezer and let it soften.  Melt brown sugar and butter over low heat; bring to boil (stir continuously).  In seperate bowl, mix rice crispies, coconut, and nuts.  Pour sugar mixture over rice crispy mixture.  Press half the mixture into 9x13 pan.  Spoon ice cream over crust and spread evenly.  Top with remaining crumbs.  Press, cover and freeze (let it freeze for at least an hour before serving).


Becky's Best Cupcakes
1 3/4 cups flour
2/3 cup granulated sugar
1 sm. pkg instant vanilla pudding mix (3.4 oz)
2 tsp baking powder
1/2 tsp salt
2 eggs
1 1/4 cups milk
1/2 cup vegetable oil
1 tsp vanilla extract
In a bowl, combine the dry ingredients.  In another bowl beat eggs, milk, oil and vanilla.  Add dry ingredients and mix until blended.  Fill paper lined muffin cups 3/4 full.  Bake at 375 degrees for 12-22 minutes or until a toothpick comes out clean.  Cool on a wire rack and frost w/ your favorite frosting.  Yield:  1 dozen.


Baked Ziti
1 12oz. package ziti pasta, cook according to package, drain and set aside.  You want your pasta to be more on the firm side.
1 jar Prego traditional spaghetti sauce (1 lb. 10 oz.)
2 cups shredded mozzarella cheese
2-3 dashes dehydrated onion
1 lb. ground beef
1 cup cottage cheese
1 Tbsp parsley
1 Tbsp minced garlic
Brown hamburger with onion and garlic; drain off grease.  Then stir in sauce and simmer for 10 minutes.  Remove 1 cup of meat sauce and set aside.  Stir cooked pasta into remaining sauce.  Place 1/2 pasta mixture into a greased 9x13 casserole dish.  Combine cottage cheese w/ parsley; evenly spread on top of mixture in casserole dish.  Sprinkle w/ 1 cup mozzarella cheese.  Place remaining pasta mixture on top of cheese.  Cover with reserve meat sauce and remaining mozzarella cheese.  Cover with foil and bake @ 350 degrees for 25-30 minutes or until hot and bubbly.  You can assemble and refrigerate until you are ready to heat and serve, but you must allow for more heating time in your oven (up to 1 hour).
